I'm guessing she doesn't want to work on Mondays. Maybe she has other arrangements. It doesn't matter why, she doesn't do it and I wouldn't say it's your place to ask why. You could ask if she's likely to be available on a Monday sometime and try to book far in advances but it's not your place to ask what she does on a Monday.
