My vote would be for English (powerful stuff in small quantities) but Dijon (smooth and sensual) is pretty much as good.

Wholegrain is an occasional choice for those who want a good balance between the power of English but the flavour profile of Dijon.

Wasabi for serious thrillseekers only.

American, while generally mild although in liberal quantities (i.e smothered all over) can perk up a sausage or two.
