Weightlifting. It only seems to appear every now and again on Eurosport or the Olympics or Commonwealth Games Sad.
Speedway. I can remember when ITV would show highlights - but that ended many years ago. I think Sky did give it some coverage, but that's been pushed away. If you wish to view the Speedway GP series you'll need to wait until some kind person uploads it to YouTube and have an understanding of Polish as that's the language they are broadcasting in.

I certainly don't see it on any TV channel (including the babe channels) or any Olympics since it's inception, forshame.

Shinty. BBC Scotland used to give this sport some minuscule coverage - but these days none at all.
Any Paralympic/disabled sports - After the success of London 2012 and Sochi and the excitement generated there has been a missed opportunity to show sports such as Wheelchair Basketball, Murderball, Boccia.
