what's the smoke tradition with choosing new pope?

White smoke means that a new pope has been chosen, black smoke means they've not decided.

Am I correct in believing that the Camerlengo is incharge of the runnning of the church until a new Pope is chosen. (I've watched the Angels and Demons film)

I think many are hoping the new pope will carry on the good work of Francis
